Cannabutter - Cooking With Jimmy's

Cannabis butter, or “cannabutter” can be used in place of regular butter or margarine in any recipe. And, it’s super simple to make.

Ingredients

  • 28 grams Dried Cannabis
  • 1 Lbs / Brick Margarine or Butter
  • 4-6 Cups Water

Instructions

Step 1: Grind the sh*t out of your stash

Use a hand grind or use an electric grinder if you have one to bust up your cannabis flower (“bud”). The purpose is to expose more of the surface area of the flower for extraction purposes.

Step 2: Decarboxylation = a heating process that activates the dormant cannabinoids

Decarb yo Bud

Boil your bud in a large pot. Add your bud to a nice big pot of water and bring it to a rapid boil. The cannabis will sink and then rise to the top. That’s when you know the decarboxylation has occurred (i.e. the THC has been activated). This takes approx. 30-90 minutes.

Baker’s choice:  

You can also decarboxylate your bud by grinding it up and then spreading it evenly on a baking sheet lined with parchment paper. Bake at 230° for 30-45 minutes. OR if you have a precision cooker (looking at you, fancy pants) sous vide is an excellent option.

Step 3: When two (butter and bud) become one

Add all of the margarine and butter to your pot and lower your water temperature to ‘barely a simmer’ [85ºC (185ºF)] for 3-5 hours. The more patience you have the more potent you can expect your end product to be. You can tell the job is done when the top of the mix turns from really watery to glossy and thick.

Step 4: Cool down the pace

Bring your pot and its contents off the stove to cool for a hot few minutes. Once the water is at a safe working temperature then strain it through cheesecloth into a dish that can handle heat (e.g. Rubbermaid container, mason jar, etc.). Ring out your cheesecloth and discard the leftover flower pieces along with the cheesecloth. Let your liquid mixture sit for an hour and then place in the refrigerator until the water and the butter/margarine separates (science).

Step 5: Find a container that sparks joy and store your magic

Your cannabutter will have risen to the top of your container. Use a utensil to scrape it out and into an airtight container. You can store for approximately a week in the fridge or several months in the freezer.

Before cooking or baking with the butter, test its potency by spreading a teaspoon on your favourite vehicle (i.e. cookie, bread, etc.).

Potency calculation

While this is not an exact science you can use this potency calculation to get an approximate potency level of your cannabutter.

Example:

17% of THC in starting in material

28 grams of starting material

16 fluid ounces of margarine (2 Cups)

Equals = 104 mg per Tablespoon

Therefore, if you have a cookie recipe which makes 18 serving sizes and calls for 3 Tbsp of butter you would end up with 17 mg cookies. You can add less or more butter to adjust the potency.

    Great simple process, I find using clarified butter is great. Decarbox in the oven first, you don’t want your product ever going pass 315 degrees, 240 fir 28 to 35 mins, then simmer and watch it with thermometer.
    Add water is required as you want your product at least 1 1/2” off the bottom of pot at all times!
